These delicious crispy marinated cucumbers are normally served with The Cheesecake Factory Thai Lettuce Wraps, but they taste great as a snack or in place of a salad or side dish.
Make sure you wait until the marinade is truly at room temperature before you add the cucumbers or else they’ll come out limp when you serve them.
- 1/3 cup rice vinegar
- 1/4 cup sugar
- 1/4 cup water
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1 large cucumber - seeded
Combine the vinegar, sugar, water and salt in a small pan and cook over a medium heat, stirring until it boils and the sugar is dissolved. Then remove from the heat and let cool to room temperature.
Peel the cucumber and cut lengthwise into quarters. Scoop out the seeds and cut crosswise into 1/8" slices.
Place in a serving bowl and pour marinade over cucumbers, stirring to blend. Cover and refrigerate for up to 2 hours.
